Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a separate small bowl, whisk together the mashed bananas and buttermilk.
  6. Add the dry ingredients to the wet ingredients alternately with the banana mixture, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
