2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup granulated sugar
1 large egg
1 cup buttermilk
1/3 cup unsalted butter, melted
1 teaspoon vanilla extract
1 1/2 cups fresh blueberries
Instructions
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
In a separate medium bowl, whisk together the egg, buttermilk, melted butter, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix; a few lumps are okay.
Gently fold in the fresh blueberries.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are golden brown.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For an extra touch, you can sprinkle a little sugar on top of each muffin before baking for a slight crunch.
If you don’t have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or white vinegar to 1 cup of milk and letting it sit for 5-10 minutes.
Ensure your blueberries are dry before adding them to the batter to prevent them from sinking to the bottom.
