2 pounds ground beef (80/20 recommended)
1 cup breadcrumbs
1/2 cup finely chopped onion
2 large eggs, lightly beaten
1/4 cup milk
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup ketchup (for the meatloaf mixture)
1/2 cup BBQ sauce (for the glaze)
1 tablespoon brown sugar (for the glaze)
1 teaspoon apple cider vinegar (for the glaze)
Grandma’s Secret Ingredient: 1 tablespoon Dijon mustard (mixed into the glaze)
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, combine the ground beef, breadcrumbs, chopped onion, eggs, milk, Worcestershire sauce, salt, pepper, and ketchup. Mix gently with your hands until just combined. Do not overmix.
Shape the mixture into a loaf in a baking dish or on a baking sheet lined with parchment paper.
In a small bowl, whisk together the BBQ sauce, brown sugar, apple cider vinegar, and Dijon mustard for the glaze.
Spread half of the glaze over the top of the meatloaf.
Bake for 45 minutes.
Remove the meatloaf from the oven and spread the remaining glaze over the top.
Bake for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C) and the glaze is caramelized.
Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
Using 80/20 ground beef yields a tender and moist meatloaf.
For a richer flavor, you can add a splash of liquid smoke to the glaze.
If you don’t have Dijon mustard, a little bit of yellow mustard can be used as a substitute.
