  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup crumbled cotija cheese
  • 2 tablespoons fresh lime juice
  • Lime wedges, for serving

Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the corn directly on the grates for 10-15 minutes, turning occasionally, until kernels are tender and slightly charred.
  3. While the corn grills, combine mayonnaise, Mexican crema, chili powder, and smoked paprika in a small bowl. Mix well.
