Ingredients
Scale
1 (9-inch) unbaked pie crust
4 large eggs
1/2 cup granulated sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
2 cups whole milk
Pinch of nutmeg (for topping)
Instructions
Preheat your oven to 350 degrees F (175 degrees C).
Place the unbaked pie crust in a 9-inch pie plate.
In a medium bowl, whisk together the eggs, sugar, and salt until well combined.
Stir in the vanilla extract.
Slowly whisk in the milk until the mixture is smooth.
Pour the custard mixture into the unbaked pie crust.
Sprinkle a light pinch of nutmeg over the top of the filling.
Bake for 40 to 50 minutes, or until the center is just set (a knife inserted near the edge comes out clean).
Cool completely on a wire rack before slicing and serving.
Notes
For a silkier texture, you can strain the custard mixture through a fine-mesh sieve before pouring it into the crust.
If the crust edges start browning too quickly, cover them loosely with aluminum foil during baking.
This pie is excellent served slightly warm or chilled.
