1 cup (227g) unsalted butter, softened
1/2 cup (100g) granulated sugar
1 large egg yolk
1 teaspoon vanilla extract
2 cups (240g) all-purpose flour
1/4 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, beat the softened butter and sugar together until light and fluffy.
Mix in the egg yolk and vanilla extract until just combined.
Gradually add the flour and salt. Mix on low speed until a soft dough forms. Do not overmix.
Shape the dough into small balls or use a cookie press for classic shapes. Place them on the prepared baking sheets.
Bake for 10 to 12 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For extra richness, substitute 2 tablespoons of the butter with unsalted butter browned beforehand. Let it cool slightly before mixing.
You can chill the dough for 30 minutes before shaping if you prefer crisper edges.
Store cooled cookies in an airtight container at room temperature.
