1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1 teaspoon curry powder
1/2 teaspoon ground cumin
1/4 teaspoon turmeric
1/4 teaspoon cayenne pepper (optional)
1 can (13.5 ounces) full-fat coconut milk
1 can (15 ounces) chickpeas, rinsed and drained
1/2 cup vegetable broth
Salt and pepper to taste
Fresh cilantro, chopped, for garnish
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat.
Add the chopped onion and cook until softened, about 5-7 minutes.
Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.
Add the curry powder, cumin, turmeric, and cayenne pepper (if using). Stir well to coat the onions and cook for 30 seconds.
Pour in the coconut milk and vegetable broth. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
Add the rinsed and drained chickpeas to the pot.
Season with salt and pepper to taste.
Simmer for 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
Serve hot, garnished with fresh cilantro.
Notes
Serve with rice or naan bread for a complete meal.
Feel free to add other vegetables like spinach, bell peppers, or sweet potatoes.
