4 large eggs
1/2 cup unsweetened almond milk (or dairy-free milk)
1 teaspoon baking powder
1/2 teaspoon vanilla extract
Pinch of salt
1 tablespoon melted coconut oil or butter (plus more for the griddle)
Optional: 1-2 tablespoons of your preferred sugar substitute for sweetness
Instructions
In a medium bowl, whisk together the coconut flour, baking powder, and salt.
In a separate bowl, whisk the eggs, almond milk, vanilla extract, and melted coconut oil until well combined.
Pour the wet ingredients into the dry ingredients. Whisk until just combined. If using a sugar substitute, mix it in now. The batter will be thick; this is normal for coconut flour. Let the batter rest for 5 minutes to allow the flour to absorb the liquid.
Heat a non-stick griddle or skillet over medium heat. Lightly grease the surface with coconut oil or butter.
Drop batter by 1/4 cup measures onto the hot griddle. You may need to gently spread the batter slightly with the back of your spoon to form a round shape, as it won’t spread much on its own.
Cook for 3 to 4 minutes per side, until golden brown and set in the center. Flip carefully.
Serve immediately with your favorite toppings for a wholesome breakfast stack.
Notes
For extra fluffiness, separate the egg whites and whip them to soft peaks before gently folding them into the batter at the end.
