A refreshing and simple cold salad featuring Southern peas in a tangy vinaigrette, perfect for summer meals and gatherings.

Ingredients

  • 2 cups cooked and cooled Southern peas (black-eyed peas or field peas)
  • 1 cup chopped celery
  • 1/2 cup chopped red onion
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup vegetable oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine the cooled peas, celery, red onion, green bell pepper, and parsley in a large bowl.
  2. In a separate small bowl, whisk together the vegetable oil, apple cider vinegar, Dijon mustard, sugar, salt, and pepper until well combined. This is your dressing.
  3. Pour the dressing over the pea mixture.
  4. Toss gently until all ingredients are evenly coated.
  5. Cover the bowl and refrigerate for at least 2 hours before serving to allow the flavors to meld.
  6. Stir the salad again before serving cold.

Notes

  • You can use canned peas if you rinse and drain them well before use.
  • For a richer flavor, substitute half of the vegetable oil with olive oil.
  • This salad tastes better if you prepare it a day ahead of time.
