Make soft, fluffy cookies fast using only cake mix, Cool Whip, and an egg. This recipe is perfect for quick baking or holiday treats.

  • 1 box (15.25 oz) cake mix (any flavor)
  • 1 container (8 oz) frozen whipped topping, thawed
  • 1 large egg
  • Powdered sugar, for rolling

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, combine the dry cake mix, thawed whipped topping, and egg. Mix until just combined into a soft dough. Do not overmix.
  3. Pour powdered sugar into a shallow dish.
  4. Scoop the dough by rounded tablespoons. Roll each scoop completely in the powdered sugar until fully coated.
  5. Place the coated dough balls about 2 inches apart on the prepared baking sheets.
  6. Bake for 10 to 12 minutes, or until the edges are set. The centers will look slightly soft.
  7. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Notes

  • You can use any flavor of cake mix; chocolate or spice mixes work well for holiday versions.
  • For a crinkle cookie look, roll the dough balls generously in the powdered sugar.
  • These cookies are very soft when warm; allow them to set before handling them too much.
