Make a creamy, sharp, and smooth macaroni and cheese at home that tastes just like the restaurant version.

Ingredients

Scale
  • 1 pound elbow macaroni
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup evaporated milk
  • 8 ounces Velveeta cheese, cubed
  • 8 ounces sharp cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Cook the elbow macaroni according to package directions until al dente. Drain well and set aside.
  2. In a large saucepan over medium heat, melt the butter.
  3. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  4. Gradually whisk in the whole milk until the mixture is smooth. Cook, stirring often, until the sauce thickens slightly, about 5 minutes.
  5. Reduce the heat to low. Stir in the evaporated milk.
  6. Add the cubed Velveeta cheese and the shredded sharp cheddar cheese. Stir continuously until both cheeses are completely melted and the sauce is smooth. Do not let the sauce boil.
  7. Stir in the salt, black pepper, and cayenne pepper.
  8. Add the cooked and drained macaroni to the cheese sauce. Stir gently until the pasta is fully coated.
  9. Serve immediately for the creamiest texture.

Notes

  • For the best texture, shred your own sharp cheddar cheese instead of using pre-shredded varieties.
  • If the sauce becomes too thick upon standing, add a splash of whole milk or evaporated milk to reach your desired consistency.
  • Cayenne pepper adds a slight background warmth without making the dish spicy.
