Make soft, thick, bakery-style sugar cookies that taste just like the popular Crumbl version, complete with signature pink almond frosting.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 1/4 cups cake flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup milk
  • For the Pink Frosting:
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2-3 tablespoons heavy cream or milk
  • Pink gel food coloring

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and almond extract until combined.
  4. In a separate bowl, whisk together the cake flour, cornstarch, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  6. Mix in the milk until a soft dough forms. Do not overmix.
  7. Scoop dough using a large ice cream scoop (about 3.5 ounces per cookie) and place onto the prepared sheets, leaving space between them.
  8. Bake for 10 to 12 minutes. The edges should be set, but the centers should look slightly underbaked.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. For the frosting, beat the softened butter until smooth. Gradually add the powdered sugar, mixing until incorporated.
  11. Add the vanilla extract, almond extract, and 2 tablespoons of heavy cream. Beat until smooth. Add more cream, one teaspoon at a time, until you reach a thick but spreadable consistency.
  12. Add a few drops of pink gel food coloring and mix until you achieve the desired color.
  13. Once cookies are completely cool, spread a generous layer of pink frosting on top of each cookie.

Notes

  • Using cake flour and cornstarch is key to achieving the soft, slightly dense texture Crumbl cookies have.
  • For the thickest cookie, chill the dough for 30 minutes before scooping if your kitchen is warm.
  • Do not overbake; the cookies firm up as they cool.
  • Use gel food coloring for the best, most vibrant pink color without thinning the frosting.
