2 small flour tortillas (about 6 inches)
2 large eggs
1 tablespoon milk or water
1/4 teaspoon salt
Pinch of black pepper
2 slices American cheese (or similar processed cheese)
2 small sausage patties (or 4 strips of cooked bacon)
Instructions
Prepare the egg patty: Whisk the eggs, milk, salt, and pepper together in a small bowl.
Heat a non-stick pan or a round egg ring over medium heat. If using a ring, lightly grease it.
Pour half of the egg mixture into the heated pan or ring. Cook until the edges set, then flip and cook briefly until fully set. Repeat for the second egg patty. The goal is a thin, round patty.
Warm the tortillas: Heat each tortilla in a dry skillet over medium heat for about 15-20 seconds per side until soft and pliable.
Assemble the wrap: Place one warm tortilla on a clean surface. Layer one slice of cheese on the center of the tortilla.
Place one cooked egg patty on top of the cheese.
Add one sausage patty (or two bacon strips) on top of the egg.
Fold the tortilla tightly around the filling to form a wrap. Repeat the assembly process for the second wrap.
Serve immediately for a quick grab-and-go breakfast.
Notes
For faster cooking, you can microwave the egg mixture in a small, round, microwave-safe dish for 45-60 seconds until set, then cut into two circles.
Use a cheese slice that melts easily to mimic the original texture.
This recipe is easily scaled up for meal prepping; wrap individual finished wraps tightly in foil or plastic wrap and store them in the refrigerator for up to 3 days or freeze them.
