4 English muffins
4 slices American cheese
4 large eggs
4 pre-cooked sausage patties (or raw sausage formed into thin, round patties)
1 teaspoon ground sage
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 tablespoon butter or oil for cooking
Instructions
If using raw sausage, mix the sage, pepper, salt, nutmeg, garlic powder, and onion powder into the ground meat. Form the meat into four thin, round patties slightly larger than your English muffins.
Cook the sausage patties in a skillet over medium heat until fully cooked, about 3 to 4 minutes per side. Set aside and keep warm.
Prepare the eggs using a round egg mold or ring placed in a non-stick skillet over medium-low heat. Crack one egg into the mold. Cook until the whites are set, about 2 minutes. Flip carefully and cook for 30 seconds more. Remove the mold. Repeat for the remaining eggs.
Slice the English muffins in half and lightly toast them until just warm and slightly crisp.
Assemble the sandwich: Place one slice of American cheese on the bottom half of each toasted muffin. Top the cheese with one cooked sausage patty. Place one round egg on top of the sausage. Top with the other half of the English muffin.
Serve immediately while warm.
Notes
For the most authentic sausage flavor, do not skip the sage and nutmeg in the seasoning mix.
To get perfectly round eggs, use a metal ring or a silicone egg shaper while cooking.
Use thin, processed American cheese slices; they melt correctly for the classic texture.
