1 pound large shrimp, peeled and deveined
1 large egg white
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup cornstarch
1/2 cup all-purpose flour
Vegetable oil, for frying
1 cup walnut halves
1/4 cup granulated sugar
1 tablespoon water
1/2 cup mayonnaise
1/4 cup sweetened condensed milk
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon lemon juice
1/4 teaspoon salt
Lettuce leaves, for serving
Instructions
Pat the shrimp dry with paper towels. In a bowl, whisk the egg white until slightly frothy. Add the shrimp, salt, and pepper, tossing to coat.
In a separate shallow dish, combine the cornstarch and flour. Dredge the shrimp in the flour mixture, shaking off any excess coating.
Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).
Fry the shrimp in batches, turning occasionally, until golden brown and cooked through, about 3 to 4 minutes per batch. Remove with a slotted spoon and drain on a wire rack lined with paper towels.
Prepare the candied walnuts: In a small, dry skillet over medium heat, combine the walnuts, sugar, and water. Stir constantly until the sugar dissolves and coats the nuts, about 5 minutes. Spread the coated walnuts onto parchment paper to cool completely.
Prepare the sauce: In a medium bowl, whisk together the mayonnaise, sweetened condensed milk, honey, rice vinegar, lemon juice, and salt until smooth.
Gently toss the fried shrimp with the prepared sauce until lightly coated.
Arrange lettuce leaves on a serving platter. Place the sauced shrimp on top of the lettuce. Sprinkle the cooled candied walnuts over the shrimp before serving immediately.
Notes
For extra crispy shrimp, you can double-fry them: fry once until pale golden, rest for 5 minutes, then fry again until deep golden brown.
Use good quality mayonnaise for the best sauce flavor.
If you do not have rice vinegar, white vinegar is a possible substitute, but adjust the amount as needed.
