Ingredients
Scale
8 ounces cream cheese, softened
1 can (15 ounces) whole kernel corn, drained
1 can (4 ounces) diced green chilies, drained
1/2 cup sour cream
1/2 cup shredded Monterey Jack cheese
1/4 cup grated Parmesan cheese
1 teaspoon taco seasoning
1/4 teaspoon salt
1/4 cup chopped fresh cilantro (optional, for garnish)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish or a small oven-safe skillet.
In a medium bowl, combine the softened cream cheese, drained corn, drained green chilies, sour cream, Monterey Jack cheese, Parmesan cheese, taco seasoning, and salt. Mix well until all ingredients are evenly incorporated.
Spread the mixture evenly into your prepared baking dish or skillet.
Bake for 20 to 25 minutes, or until the dip is heated through and the cheese on top is melted and slightly bubbly.
Remove from the oven and let it cool for 5 minutes before serving. Garnish with fresh cilantro, if using.
Notes
To keep this hot corn dip melty on your buffet, transfer the baked dip to a small slow cooker set to the ‘Warm’ setting after baking.
For a richer flavor, substitute 1/2 cup of mayonnaise for the sour cream.
Serve this easy party dip with tortilla chips, sturdy crackers, or vegetable sticks.
