2 cups Masa Harina
1 1/2 cups warm water
1/2 teaspoon salt
Instructions
Mix the Masa Harina and salt in a medium bowl.
Gradually add the warm water while mixing with your hands until a soft dough forms.
Knead the dough for about 2 minutes until it is smooth and no dry spots remain. If the dough is too dry, add water one teaspoon at a time. If it is too sticky, add Masa Harina one teaspoon at a time.
Cover the dough with a damp cloth and let it rest for 30 minutes.
Divide the dough into 16 equal balls, about the size of a golf ball. Keep the dough covered while you work to prevent drying.
Heat a comal or heavy skillet over medium-high heat. Do not grease the surface.
Place one dough ball between two pieces of plastic wrap or inside a tortilla press lined with plastic. Press firmly until the dough is about 1/8 inch thick.
Peel off the top layer of plastic, flip the tortilla onto your hand, and peel off the second layer. Gently place the tortilla onto the hot comal.
Cook for 30 seconds until bubbles start to form. Flip the tortilla.
Cook for another 60 seconds, then flip again. Cook for a final 30 seconds. The tortilla should puff slightly.
Remove the cooked tortilla and wrap it immediately in a clean kitchen towel or place it in a tortilla warmer to keep it soft.
Repeat with the remaining dough balls.
Notes
For soft tortillas, always keep the unused dough covered.
If you do not have a tortilla press, place the dough ball between two sheets of plastic wrap and use a heavy skillet or rolling pin to flatten it.
Store fresh tortillas wrapped tightly in plastic wrap in the refrigerator for up to 5 days or freeze them for longer storage.
