1 cup cottage cheese
6 large eggs
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheese (cheddar or Monterey Jack)
1/2 cup cooked, crumbled bacon or diced spinach
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin.
In a blender or food processor, combine the cottage cheese, eggs, salt, and pepper. Blend until completely smooth. This step is key for a smooth texture.
Stir in the shredded cheese and your chosen mix-ins (bacon or spinach) into the egg mixture.
Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
Bake for 20 to 25 minutes, or until the centers are set and a toothpick inserted comes out clean.
Let the egg cups cool in the pan for 5 minutes before removing them.
Notes
For a texture closer to sous-vide, you can bake the cups in a water bath (place the muffin tin in a larger baking dish and fill the larger dish halfway with hot water).
These cups store well in the refrigerator for up to 4 days for meal prep.
You can substitute the mix-ins with diced ham, bell peppers, or feta cheese.
