Make simple, protein-rich egg cups at home using cottage cheese for a texture similar to Starbucks egg bites. Bake these crustless quiche cups for easy meal preparation.

Ingredients

Scale
  • 1 cup cottage cheese
  • 6 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked, crumbled bacon or diced spinach

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin.
  2. In a blender or food processor, combine the cottage cheese, eggs, salt, and pepper. Blend until completely smooth. This step is key for a smooth texture.
  3. Stir in the shredded cheese and your chosen mix-ins (bacon or spinach) into the egg mixture.
  4. Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 20 to 25 minutes, or until the centers are set and a toothpick inserted comes out clean.
  6. Let the egg cups cool in the pan for 5 minutes before removing them.

Notes

  • For a texture closer to sous-vide, you can bake the cups in a water bath (place the muffin tin in a larger baking dish and fill the larger dish halfway with hot water).
  • These cups store well in the refrigerator for up to 4 days for meal prep.
  • You can substitute the mix-ins with diced ham, bell peppers, or feta cheese.
