Make a fudgy, high-protein brownie in minutes using your microwave and cottage cheese. This single-serving recipe is a fast, low-carb dessert hack.

Ingredients

Scale
  • 1/4 cup cottage cheese (full fat or low fat)
  • 1 large egg
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon almond flour
  • 1 tablespoon sweetener (like erythritol or monk fruit)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1 small square (about 1/2 oz) dark chocolate, chopped (optional, for extra fudginess)
  • Pinch of salt

Instructions

  1. Lightly grease a microwave-safe mug or small ramekin.
  2. Place the cottage cheese and egg into a small food processor or blender. Blend until completely smooth, ensuring no lumps remain. This step is key for a smooth texture.
  3. Pour the cottage cheese mixture into a separate bowl.
  4. Add the cocoa powder, almond flour, sweetener, vanilla extract, baking powder, and salt to the bowl. Mix well until just combined. Do not overmix.
  5. Stir in the chopped dark chocolate, if using.
  6. Pour the batter into your prepared mug or ramekin.
  7. Microwave on high for 60 to 90 seconds. Start checking at 60 seconds. The brownie is done when the edges look set but the center is still slightly soft and fudgy. Microwave times vary based on wattage.
  8. Let the brownie cool in the mug for 2 minutes before eating. Enjoy this healthy single serving dessert immediately.

Notes

  • For the best texture, make sure your cottage cheese is fully blended until it resembles a thick cream.
  • If you prefer a richer flavor, add 1/4 teaspoon of instant coffee powder with the dry ingredients.
  • This recipe is a great keto microwave brownie base; adjust sweetener to your preference.
