Make small, comforting apple fritter bites that look like mini donut holes. This recipe yields soft, spiced apple pieces coated in a simple glaze.

  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk

  • 1 teaspoon vanilla extract
  • 1 cup finely diced apple (about 1 medium apple)
  • Vegetable oil, for frying (if frying) OR cooking spray (if baking)
  • For the Glaze: 1 cup powdered sugar

  • For the Glaze: 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
  2. In a separate small bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  4. Gently fold in the finely diced apple pieces.
  5. To make donut holes: Heat about 2 inches of vegetable oil in a deep pot to 350 degrees F (175 degrees C) for frying. Alternatively, preheat your oven to 375 degrees F (190 degrees C) and grease a mini donut pan or line a baking sheet with parchment paper.
  6. For frying: Drop batter by rounded teaspoons into the hot oil, being careful not to overcrowd the pot. Fry for 1 to 2 minutes per side until golden brown. Remove with a slotted spoon and place on a wire rack over paper towels to drain excess oil.
  7. For baking: Drop batter by rounded teaspoons into the prepared mini donut pan wells or onto the baking sheet. Bake for 10 to 12 minutes, or until lightly golden. Let cool slightly.
  8. While the bites cool, prepare the glaze: Whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk, a drop at a time, if the glaze is too thick.
  9. Dip or drizzle the warm apple fritter bites into the glaze. Let the glaze set before serving.

Notes

  • Use a firm, tart apple like Granny Smith for the best texture in the bites.
  • If you prefer a crispier exterior, toss the fried or baked bites lightly in cinnamon sugar immediately after cooling slightly, before glazing.
  • This recipe works well as a small batch dessert if you halve all the ingredient quantities.
