1 tablespoon olive oil
1 large onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
1 medium butternut squash, peeled, seeded, and cubed
2 large carrots, peeled and sliced
1 cup chopped kale
1 (14.5 ounce) can diced tomatoes, undrained
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
Salt and black pepper to taste
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
Stir in minced garlic and cook for 1 minute more until fragrant.
Pour in vegetable broth, then add cubed butternut squash, sliced carrots, diced tomatoes (undrained), dried thyme, and dried rosemary.
Bring the soup to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until vegetables are tender.
Stir in chopped kale and cook for another 5 minutes, or until the kale has wilted.
Season with salt and black pepper to taste.

Notes
For a creamier soup, you can blend a portion of the soup with an immersion blender before adding the kale.
