This cozy autumn vegetable soup features a variety of seasonal vegetables like butternut squash, carrots, and kale, creating a hearty and flavorful one-pot meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 medium butternut squash, peeled, seeded, and cubed
  • 2 large carrots, peeled and sliced
  • 1 cup chopped kale
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
  2. Stir in minced garlic and cook for 1 minute more until fragrant.
  3. Pour in vegetable broth, then add cubed butternut squash, sliced carrots, diced tomatoes (undrained), dried thyme, and dried rosemary.
  4. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until vegetables are tender.
  5. Stir in chopped kale and cook for another 5 minutes, or until the kale has wilted.
  6. Season with salt and black pepper to taste.
