  • 1.5 pounds Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup fresh cranberries
  • 1/4 cup balsamic glaze

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper until evenly coated.
  3. Spread the Brussels sprouts in a single layer on a baking sheet.
  4. Roast for 15 minutes.
  5. Add the fresh cranberries to the baking sheet and toss with the Brussels sprouts.
  6. Roast for another 10-15 minutes, or until the Brussels sprouts are tender and slightly caramelized, and the cranberries have softened.
  7. Drizzle the balsamic glaze over the Brussels sprouts and cranberries.
  8. Toss gently to combine.
  9. Serve immediately.

  • For a sweeter glaze, reduce the balsamic glaze by simmering it gently in a small saucepan for 5-10 minutes until it thickens.
