  • 2 lbs boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup fresh or frozen cranberries
  • 1/2 cup orange juice
  • 1/4 cup brown sugar, packed
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • Salt and black pepper to taste

Instructions

  1. Season the chicken breasts lightly with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Sear the chicken for 4 to 5 minutes per side until lightly browned. Remove the chicken and set it aside.
  4. In the same skillet, combine the cranberries, orange juice, and brown sugar. Bring the mixture to a simmer.
  5. Cook the cranberry mixture for about 5 to 7 minutes, stirring occasionally, until the cranberries begin to burst.
  6. In a small bowl, whisk together the cornstarch and water to create a slurry.
  7. Stir the slurry into the simmering cranberry sauce. Cook for 1 minute until the sauce thickens slightly.
  8. Stir in the balsamic vinegar.
  9. Return the chicken to the skillet. Spoon the sauce over the chicken.
  10. Reduce the heat to low, cover, and let it simmer for 10 to 15 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C).
  11. Serve immediately with the extra sauce from the pan.

  • For a richer flavor, you can substitute chicken broth for half of the orange juice.
  • If you prefer a smoother sauce, you can mash some of the burst cranberries with the back of a spoon.
