  • 8 ounces cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas. Stir in the melted butter, ¾ cup granulated sugar, 1 large egg, and 1 teaspoon vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. In a medium bowl, beat the softened cream cheese with ¼ cup granulated sugar, the egg yolk, and 1 teaspoon vanilla extract until smooth and creamy.
  6. Pour about half of the banana bread batter into the prepared loaf pan.
  7. Spoon dollops of the cream cheese mixture over the batter.
  8. Pour the remaining banana bread batter over the cream cheese layer.
  9. Use a knife or skewer to gently swirl the cream cheese mixture into the banana bread batter.
  10. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out with moist crumbs attached (not wet batter).
  11. Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
