Creamy Cajun Chicken Alfredo (One-Pot Spicy Pasta)

A quick and easy one-pot pasta dish featuring tender chicken and alfredo sauce with a spicy Cajun kick. Perfect for a weeknight meal.

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 12 ounces fettuccine
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Toss chicken pieces with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
  3. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in diced tomatoes (with their juice), chicken broth, and fettuccine. Bring to a boil.
  5. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is al dente, stirring occasionally.
  6. Stir in heavy cream, Parmesan cheese, and cooked chicken. Cook, stirring, until sauce is heated through and slightly thickened, about 3-5 minutes.
  7. Garnish with fresh parsley before serving.

Notes

  • Adjust the amount of Cajun seasoning to your spice preference.
  • For a richer sauce, you can add a tablespoon of butter along with the heavy cream.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
