  • 1/2 cup all-purpose flour
  • 4 cups chicken or vegetable broth
  • 3 cups peeled and cubed Russet potatoes (about 3 medium)
  • 1 medium yellow onion, finely chopped
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup milk (whole or 2%)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/2 cup cooked crumbled bacon or chives for topping

Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes. Do not brown.
  3. Whisk in the flour to create a roux. Cook, stirring constantly, for 1 minute.
  4. Slowly whisk in the broth until the mixture is smooth.
  5. Add the cubed potatoes to the pot. Bring the soup to a boil, then reduce the heat to low, cover, and simmer until the potatoes are tender, about 15-20 minutes.
  6. Remove the pot from the heat. Use an immersion blender or carefully transfer batches to a regular blender to partially blend the soup until creamy. Leave some potato chunks for texture.
  7. Stir in the milk, salt, and pepper. Return the pot to low heat, but do not boil.
  8. Gradually add 1 1/2 cups of the shredded cheddar cheese, stirring until completely melted and smooth before adding more.
  9. Taste and adjust seasoning as needed. Serve immediately topped with remaining cheese, bacon, or chives if you wish.

  • For an extra smooth texture, shred your own cheese; pre-shredded cheese often contains anti-caking agents that can make the soup grainy.
