This creamy chicken and wild rice soup is a comforting slow-cooker meal perfect for a cozy dinner. It’s packed with tender chicken, hearty wild rice, and nutritious vegetables.

  • 2 boneless, skinless chicken breasts
  • 1 cup wild rice blend, rinsed
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped yellow onion
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Place chicken breasts, rinsed wild rice blend, carrots, celery, and onion in your slow cooker.
  2. Pour in chicken broth.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and rice is tender.
  4. Remove chicken from the slow cooker and shred it. Return the shredded chicken to the slow cooker.
  5. In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  6. Gradually whisk in milk and heavy cream until smooth. Cook, stirring, until the mixture thickens.
  7. Stir the milk mixture into the slow cooker.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh parsley if desired.

Notes

  • For a thicker soup, you can use a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) in place of the butter and flour mixture.
  • Feel free to add other vegetables like peas, corn, or mushrooms.
  • This soup can be made ahead and reheated. The rice will continue to absorb liquid, so you may need to add a bit more broth or milk when reheating.
