  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 (9 ounce) package refrigerated cheese tortellini
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5 minutes.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Pour in chicken broth and diced tomatoes. Add Italian seasoning and thyme. Bring the mixture to a boil.
  5. Reduce heat and simmer for 10 minutes. Season with salt and pepper.
  6. Add the cooked chicken and the refrigerated tortellini to the pot. Cook according to tortellini package directions, usually 3-5 minutes, until the pasta is tender.
  7. Reduce heat to low. Stir in the heavy cream and Parmesan cheese until the soup is creamy. Do not boil after adding cream.
  8. Stir in fresh spinach until wilted. Taste and adjust seasoning if needed.
