2 lbs boneless, skinless chicken breasts or thighs
1 cup chicken broth
8 oz cream cheese, cubed
1/2 cup heavy cream
1/4 cup unsalted butter
3 tablespoons Cajun seasoning blend
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
Instructions
Place the chicken pieces in the bottom of your slow cooker.
Pour the chicken broth over the chicken.
Sprinkle the Cajun seasoning, garlic powder, onion powder, and black pepper evenly over the chicken.
Add the cubes of cream cheese and the butter on top of the chicken.
Cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is cooked through and tender.
Remove the chicken from the slow cooker and shred it using two forks.
Stir the heavy cream and Worcestershire sauce into the liquid remaining in the slow cooker until the sauce is smooth and creamy.
Return the shredded chicken to the sauce and stir to coat everything well.
Let it cook on warm for 15 minutes to allow the flavors to combine.
Serve hot, often over rice or pasta.
Notes
For a thicker sauce without adding flour, remove about 1 cup of the liquid before adding the cream cheese, mix 1 tablespoon of cornstarch with the liquid, then return it to the slow cooker before stirring in the cream cheese.
Adjust the amount of Cajun seasoning based on the spice level of your blend and your preference.
Use chicken thighs for a slightly richer flavor and moister texture.
