3 medium cucumbers, peeled and thinly sliced
1/2 red onion, thinly sliced
1 cup sour cream or mayonnaise
2 tablespoons white vinegar
1 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh dill, chopped (optional)
Instructions
In a large bowl, combine the sliced cucumbers and red onion.
In a separate small bowl, whisk together the sour cream (or mayonnaise), white vinegar, sugar, salt, and black pepper until smooth.
Pour the dressing over the cucumber and onion mixture.
Gently toss to coat all the vegetables evenly.
Stir in the fresh dill, if using.
Cover the bowl and refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
Notes
For best results, use fresh, firm cucumbers.
You can adjust the amount of sugar and vinegar to your taste.
