  • 1 pound cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup dry white wine or vegetable broth
  • 1 1/2 cups heavy cream
  • 1 cup vegetable broth
  • 8 ounces pasta (fettuccine or penne work well)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat.
  2. Add the sliced mushrooms. Cook until they release their liquid and start to brown, about 5 to 7 minutes.
  3. Stir in the minced garlic, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in the white wine or vegetable broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes until slightly reduced.
  5. Add the heavy cream and vegetable broth to the skillet. Bring the mixture to a gentle simmer.
  6. Add the dry pasta directly to the simmering sauce. Stir well to submerge the pasta.
  7. Cover the skillet and cook according to the pasta package directions, stirring occasionally to prevent sticking, until the pasta is al dente (usually 10-12 minutes).
  8. Remove the skillet from the heat. Stir in the Parmesan cheese until the sauce is smooth and creamy.
  9. Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.

  • You can add a handful of fresh spinach with the cream for extra greens.
  • For a richer flavor, substitute half the heavy cream with cream cheese.
