1 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, minced
8 oz cremini mushrooms, finely chopped
1 tsp dried oregano
1/2 tsp dried basil
1/4 tsp red pepper flakes (optional)
1/2 cup vegetable broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
Salt and freshly ground black pepper to taste
12 oz pasta of your choice
Instructions
Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
While pasta cooks, heat olive oil in a large skillet over medium heat.
Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more until fragrant.
Add chopped mushrooms and cook, stirring occasionally, until browned and their moisture has evaporated, about 8-10 minutes.
Stir in oregano, basil, and red pepper flakes (if using).
Pour in vegetable broth and scrape up any browned bits from the bottom of the skillet.
Bring to a simmer and cook for 2 minutes.
Reduce heat to low. Stir in heavy cream and Parmesan cheese until well combined and sauce is creamy.
Season with salt and pepper to taste.
Add cooked pasta to the skillet with the sauce. Toss to coat. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
Serve immediately.
Notes
For a richer flavor, use a mix of mushrooms like cremini, shiitake, and portobello.
You can add a splash of white wine after cooking the mushrooms for an extra layer of flavor.
Garnish with fresh parsley or basil before serving.
