  • 4 cups water or milk (or a mix)
  • 1 teaspoon salt
  • 1/2 cup heavy cream
  • 1/2 cup sharp cheddar cheese, grated
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine (optional)
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Bring the water or milk and salt to a boil in a medium saucepan.
  2. Slowly whisk in the grits to prevent lumps.
  3. Reduce heat to low, cover, and simmer, stirring frequently, for 25-35 minutes, or until the grits are tender and creamy.
  4. Stir in the heavy cream and grated cheese until fully melted and smooth. Keep warm over very low heat.
  5. Melt butter in a separate skillet over medium heat.
  6. Add minced garlic and cook for 30 seconds until fragrant.
  7. Add the shrimp, smoked paprika, salt, and pepper to the skillet. Cook for 2-3 minutes per side until pink and cooked through.
  8. If using, pour in the white wine and let it reduce briefly, scraping up any browned bits from the bottom of the pan.
  9. Spoon the creamy grits into bowls. Top generously with the seasoned shrimp.
  10. Garnish with fresh chopped parsley before serving immediately.

  • For extra richness, you can use chicken broth instead of water for cooking the grits.
