  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken and cook until browned. Remove chicken and set aside.
  3. Add the onion to the skillet and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more until fragrant.
  4. Stir in the thawed spinach and chopped artichoke hearts. Cook for 2-3 minutes until heated through.
  5. In a bowl, mix together the sour cream, mayonnaise, and milk. Season with salt and pepper.
  6. Return the chicken to the skillet with the spinach and artichoke mixture. Pour the sour cream mixture over everything and stir to combine.
  7. Transfer the mixture to a 9×13 inch baking dish.
  8. Sprinkle with shredded cheddar cheese. If desired, top with breadcrumbs.
  9. Bake for 20-25 minutes, or until bubbly and lightly browned.

Notes

  • For a richer flavor, you can use heavy cream instead of milk.
  • Add a pinch of red pepper flakes for a little heat.
  • Serve with a side salad or crusty bread.
