This recipe yields a rich, creamy orzo pasta dish featuring tender chicken and the intense flavor of sun-dried tomatoes, cooked primarily in one skillet.

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes packed in oil, drained and roughly chopped
  • 1 cup orzo pasta, uncooked
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the chopped onion to the same skillet and cook until softened, about 3 minutes. Add the minced garlic and chopped sun-dried tomatoes and cook for 1 minute until fragrant.
  4. Stir in the uncooked orzo and Italian seasoning. Cook for 1 minute, stirring constantly.
  5. Pour in the chicken broth. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 10-12 minutes, or until the orzo is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  6. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
  7. Return the cooked chicken to the skillet. Heat through for 1-2 minutes.
  8. Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.

Notes

  • If you prefer a richer tomato flavor, use 1/4 cup of the oil from the sun-dried tomato jar instead of plain olive oil for sautéing.
  • Stir frequently while the orzo cooks to prevent the pasta from sticking to the bottom of the pan.
  • You can substitute heavy cream with half-and-half for a slightly lighter sauce, though the texture will be less thick.
