Whip up a quick and delicious vegetarian pasta dish featuring a rich, creamy sun-dried tomato and garlic sauce. Perfect for a weeknight meal.

  • 12 oz pasta (like fettuccine or penne)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed preferred)
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Cook pasta according to package directions. Reserve about 1 cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and cook until fragrant, about 1 minute.
  4. Stir in the chopped sun-dried tomatoes and red pepper flakes (if using). Cook for another minute.
  5. Pour in the heavy cream and bring to a gentle simmer.
  6. Reduce heat to low and stir in the Parmesan cheese until melted and the sauce is smooth.
  7. Season with salt and pepper to taste.
  8. Add the drained pasta to the skillet with the sauce. Toss to coat.
  9. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
  10. Serve immediately, garnished with fresh basil if desired.

Notes

  • For a richer flavor, use the oil from the sun-dried tomato jar instead of plain olive oil.
  • Feel free to add other vegetables like spinach or mushrooms.
  • Adjust red pepper flakes for your preferred level of heat.
