A simple and comforting homemade creamy tomato basil soup, perfect for a light lunch or a satisfying side dish.

  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil leaves, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onion and cook until softened, about 5-7 minutes.
  3. Add minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the crushed tomatoes and vegetable broth. Bring to a simmer.
  5. Reduce heat to low, cover, and let simmer for 15-20 minutes to allow flavors to meld.
  6. Carefully transfer the soup to a blender or use an immersion blender to blend until smooth.
  7. Return the soup to the pot. Stir in the heavy cream and chopped basil.
  8. Heat gently until warmed through, do not boil.
  9. Season with salt and pepper to taste.
  10. Serve hot.

Notes

  • For a richer flavor, you can use chicken broth instead of vegetable broth.
  • If you don’t have fresh basil, you can use 1 tablespoon of dried basil, added during the simmering stage.
  • Adjust the amount of cream to your preference for creaminess.
