  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 (28 ounce) cans crushed tomatoes
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon sugar (optional, to balance acidity)
  • Salt and black pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onion and cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Pour in crushed tomatoes and vegetable broth. Bring to a simmer.
  5. Reduce heat to low, cover, and cook for 15-20 minutes, allowing flavors to meld.
  6. Carefully use an immersion blender to blend the soup until smooth. Alternatively, transfer soup in batches to a blender and blend until smooth.
  7. Stir in heavy cream and sugar (if using). Heat gently until warmed through, do not boil.
  8. Season with salt and black pepper to taste.
  9. Serve hot, garnished with fresh basil if desired.

  • For a richer flavor, you can roast the tomatoes before adding them to the soup.
