4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1 teaspoon garlic powder
4 cloves garlic, minced
1/2 cup sun-dried tomatoes, drained and chopped
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
2 cups fresh spinach
Instructions
Season the chicken breasts on both sides with salt, pepper, Italian seasoning, and garlic powder.
Heat the olive oil and butter in a large skillet over medium-high heat.
Sear the chicken breasts for 5-7 minutes per side until golden brown and cooked through (internal temperature reaches 165°F). Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
Add the chopped sun-dried tomatoes to the skillet and cook for 1 minute.
Pour in the heavy cream and chicken broth. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan.
Stir in the Parmesan cheese until the sauce is smooth. Let it simmer for 2 minutes until it thickens slightly.
Add the fresh spinach to the sauce and stir until it wilts down.
Return the cooked chicken breasts to the skillet, spooning the sauce over them.
Cook for 1-2 minutes to reheat the chicken and coat it completely in the sauce. Serve immediately.
Notes
For a low-carb option, skip serving with pasta or rice.
You can use chicken thighs instead of breasts; adjust cooking time as needed.
If you prefer a tangier sauce, add 1 tablespoon of lemon juice with the cream.
