2 lbs boneless, skinless chicken breasts or thighs
1 tablespoon olive oil
1 large onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped
1 (15 ounce) can cannellini beans, rinsed and drained
1 (15 ounce) can Great Northern beans, rinsed and drained
1 (4 ounce) can diced green chilies, undrained
4 cups chicken broth
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper (optional, for heat)
4 ounces cream cheese, cubed
1/2 cup heavy cream or half-and-half
Salt and black pepper to taste
Optional toppings: shredded Monterey Jack cheese, fresh cilantro, avocado
Instructions
Season chicken generously with salt and pepper.
Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken and set aside.
Add onion and bell pepper to the pot. Cook until softened, about 5-7 minutes.
Stir in garlic, cumin, oregano, and cayenne pepper (if using). Cook for 1 minute until fragrant.
Return the chicken to the pot. Add chicken broth and all the beans, and the diced green chilies. Bring the mixture to a boil, then reduce heat and simmer, covered, for 20 minutes, or until chicken is cooked through.
Remove chicken from the pot. Shred the chicken using two forks, then return the shredded chicken to the pot.
Reduce heat to low. Stir in the cream cheese cubes until completely melted and the chili is creamy.
Stir in the heavy cream or half-and-half. Heat through, but do not boil.
Taste and adjust salt and pepper as needed.
Serve hot with your favorite toppings.
Notes
For an extra creamy texture, you can mash about half the beans before adding them back to the pot.
If you prefer a brothier chili, use less cream cheese and heavy cream, or omit the heavy cream entirely.
This chili freezes well. Cool completely before transferring to a freezer-safe container.
