Make these Air Fryer Beef and Cheese Chimichangas for a wonderfully crispy, satisfying Tex-Mex treat. You get that deep-fried crunch without the extra oil. This recipe is quick, easy, and perfect for a weeknight comfort meal.

  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 8 small flour tortillas (burrito size)
  • Cooking spray (for air fryer)

Instructions

  1. Brown the ground beef and chopped onion in a skillet over medium heat. Drain any excess fat.
  2. Stir in the taco seasoning and water. Simmer until the liquid is mostly absorbed, about 5 minutes. Remove from heat and stir in the shredded cheese until melted. This is your beef filling.
  3. Lay a tortilla flat. Spoon about 1/4 cup of the beef filling onto the center of the tortilla.
  4. Fold the sides of the tortilla inward, then tightly roll the bottom edge up over the filling, creating a sealed package. Repeat with remaining tortillas and filling.
  5. Lightly spray the outside of each rolled chimichanga with cooking spray.
  6. Place the chimichangas in the air fryer basket in a single layer, ensuring they do not touch.
  7. Air fry at 375°F (190°C) for 8 to 10 minutes, flipping halfway through, until golden brown and crispy.
  8. Serve immediately with your favorite toppings like salsa and guacamole.

Notes

  • Use small burrito-sized tortillas for easier rolling and crisping.
  • Make sure to tightly seal the edges to prevent the filling from escaping during air frying.
  • If you do not have an air fryer, you can bake these at 400°F (200°C) for 15-20 minutes, flipping halfway.
