1 (15-ounce) can chickpeas, drained and rinsed
1/2 cup breadcrumbs
2 tablespoons nutritional yeast
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon paprika
Salt and black pepper to taste
2 tablespoons olive oil
Instructions
In a medium bowl, mash the chickpeas with a fork until mostly broken down.
Add breadcrumbs, nutritional yeast, garlic powder, onion powder, paprika, salt, and pepper to the bowl. Mix well until a dough-like consistency forms.
Shape the mixture into nugget-sized pieces.
Lightly coat the air fryer basket with cooking spray or a little olive oil.
Place the chickpea nuggets in the air fryer basket in a single layer.
Drizzle or spray the nuggets with olive oil.
Air fry at 375°F (190°C) for 10-12 minutes, flipping halfway through, until golden brown and crispy.
Notes
For extra crispiness, you can lightly spray the nuggets with oil before air frying.
