Make the crispiest potato pancakes, inspired by traditional Kartoffelpuffer. These pancakes have a wonderfully crisp exterior and a tender center. You can serve them for breakfast, brunch, or as a delicious side dish.

  • 4 large Russet potatoes, peeled
  • 1 small onion, grated
  • 2 large eggs, lightly beaten
  • 1/4 cup all-purpose flour or matzo meal
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil or canola oil, for frying

Instructions

  1. Grate the potatoes using the coarse side of a box grater or the shredding disc of a food processor.
  2. Place the grated potato in a clean kitchen towel or cheesecloth. Wrap tightly and squeeze out as much liquid as possible. This step is key for crispiness.
  3. Transfer the dried potato shreds to a medium bowl. Add the grated onion, beaten eggs, flour, salt, and pepper. Mix until just combined. Do not overmix.
  4. Heat about 1/4 inch of oil in a large, heavy-bottomed skillet (cast iron works best) over medium-high heat until shimmering.
  5. Working in batches, drop tablespoons of the potato mixture into the hot oil. Flatten them slightly with the back of your spoon to form small pancakes about 1/2 inch thick. Do not crowd the pan.
  6. Fry for 3 to 5 minutes per side, until deeply golden brown and crisp. Adjust the heat if they brown too quickly.
  7. Remove the pancakes from the oil and place them on a wire rack set over a baking sheet to drain excess oil. Sprinkle lightly with salt immediately.
  8. Serve hot with applesauce, sour cream, or your favorite topping.

Notes

  • Squeezing the moisture out of the potatoes thoroughly makes a big difference in achieving a crispy texture.
  • For extra flavor, you can add 1/4 cup of finely grated sharp cheddar cheese to the mixture.
  • If using leftover mashed potatoes, mix 2 cups of cold mashed potatoes with 1 egg, 2 tablespoons of flour, salt, and pepper, then fry as directed.
