  • 1 cup shelled edamame, cooked
  • 1/2 cup shredded carrot

  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chopped fresh mint
  • 1 green onion, thinly sliced
  • For the Ginger-Sesame Dressing:
  • 1/4 cup rice vinegar
  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons sesame oil
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced

Instructions

  1. Prepare the rice: Spread the day-old cooked rice thinly on a baking sheet. Let it air dry on the counter for at least 2 hours, or place it in the refrigerator for 4 hours to dry out further. This step is key for crispiness.
  2. Crisp the rice: Heat the neutral oil in a large non-stick skillet over medium-high heat. Add the dried rice and press it down slightly. Cook without stirring for 5 to 7 minutes until the bottom layer is golden brown and crispy.
  3. Flip the rice: Carefully flip the rice layer using a large spatula or by sliding it onto a plate and inverting it back into the pan. Cook the second side for another 5 minutes until crisp. Remove the crispy rice from the pan and let it cool slightly.
  4. Make the dressing: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, grated ginger, honey, and minced garlic until well combined.
  5. Assemble the salad: In a large bowl, combine the cooled crispy rice, edamame, shredded carrot, cucumber, cilantro, mint, and green onion.
  6. Dress and serve: Pour the ginger-sesame dressing over the salad ingredients. Gently toss everything together until lightly coated. Serve immediately to maintain the best crunch.
