  • 1 cup fresh or frozen corn kernels
  • 1/2 cup all-purpose flour
  • 1 large egg, lightly beaten
  • 2 tablespoons grated Parmesan cheese
  • 1 green onion, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil, for frying

Instructions

  1. Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much liquid as possible. You want the zucchini very dry for crispy fritters.
  2. In a medium bowl, combine the dry zucchini, corn kernels, flour, beaten egg, Parmesan cheese, green onion, salt, and pepper.
  3. Mix everything gently until just combined. Do not overmix the batter.
  4. Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat. The oil is ready when a small drop of batter sizzles immediately.
  5. Drop rounded tablespoons of the batter into the hot oil, flattening them slightly with the back of the spoon to form fritters. Do not crowd the pan.
  6. Fry the fritters for 3 to 4 minutes per side, until they are golden brown and crispy.
  7. Remove the fritters from the oil and place them on a wire rack lined with paper towels to drain excess oil.
  8. Serve immediately and enjoy your crispy snack!
