- 2 medium zucchini, grated and squeezed dry
- 1 cup fresh or frozen corn kernels
- 1/2 cup all-purpose flour
- 1 large egg, lightly beaten
- 2 tablespoons grated Parmesan cheese
- 1 green onion, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil, for frying
- Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much liquid as possible. You want the zucchini very dry for crispy fritters.
- In a medium bowl, combine the dry zucchini, corn kernels, flour, beaten egg, Parmesan cheese, green onion, salt, and pepper.
- Mix everything gently until just combined. Do not overmix the batter.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat. The oil is ready when a small drop of batter sizzles immediately.
- Drop rounded tablespoons of the batter into the hot oil, flattening them slightly with the back of the spoon to form fritters. Do not crowd the pan.
- Fry the fritters for 3 to 4 minutes per side, until they are golden brown and crispy.
- Remove the fritters from the oil and place them on a wire rack lined with paper towels to drain excess oil.
