  • 2 pounds ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 (14.5 ounce) cans diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 2 (15 ounce) cans kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, cornbread

Instructions

  1. In a large skillet, brown the ground beef over medium-high heat. Drain any excess fat.
  2. Add the chopped onion and minced garlic to the skillet with the ground beef. Cook until the onion is softened, about 5 minutes.
  3. Transfer the beef mixture to a large slow cooker.
  4. Stir in the diced tomatoes (undrained), tomato sauce, tomato paste, kidney beans, black beans, chili powder, ground cumin, dried oregano, and cayenne pepper (if using).
  5. Season with salt and black pepper to taste.
  6. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  7. Stir well before serving.
  8. Serve hot with your favorite toppings like shredded cheese, sour cream, or chopped green onions.

Notes

  • For a spicier chili, increase the amount of cayenne pepper.
  • You can brown the ground beef the night before to save time on the day of cooking.
