  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 (8 ounce) block cream cheese, softened
  • 1/2 cup chicken broth
  • 1 (1 ounce) packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped fresh chives or green onions, for garnish (optional)

Instructions

  1. Place the chicken breasts or thighs in the bottom of a 6-quart or larger slow cooker.
  2. In a medium bowl, whisk together the softened cream cheese, chicken broth, and ranch seasoning mix until smooth.
  3. Pour the cream cheese mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and easily shreds.
  5. Remove the chicken from the slow cooker and shred it using two forks.
  6. Return the shredded chicken to the slow cooker.
  7. Stir in the shredded cheddar cheese and cooked bacon until well combined and the cheese is melted.
  8. Serve warm, garnished with fresh chives or green onions if desired.
