Make this incredibly flavorful Crockpot Marry Me Chicken for an easy weeknight dinner. The slow cooker does the work, leaving you with tender chicken in a rich, creamy Parmesan sauce featuring sun-dried tomatoes and garlic. It is a family favorite that feels special.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts (or thighs)
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, drained and chopped
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons cornstarch (for thickening)
  • 2 tablespoons cold water (for slurry)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. In a medium bowl, whisk together the cream of chicken soup, chicken broth, heavy cream, Parmesan cheese, sun-dried tomatoes, Italian seasoning, garlic powder, onion powder, salt, and pepper until smooth.
  3. Pour the sauce mixture evenly over the chicken in the crockpot.
  4. Cover the crockpot and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is fully cooked and tender.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce.
  6. In a small bowl, whisk together the cornstarch and cold water to create a slurry. Stir the slurry into the sauce in the crockpot.
  7. Cover and cook on HIGH for an additional 10 to 15 minutes, or until the sauce has thickened to your liking.
  8. Stir everything together well. Taste and adjust seasoning if needed.
  9. Serve your Easy Crockpot Chicken Recipe hot over pasta, rice, or mashed potatoes. Garnish with fresh parsley.

Notes

  • If you prefer using chicken thighs instead of breasts, the cooking time remains similar, but thighs stay moister.
  • For an extra layer of flavor, you can sear the chicken breasts briefly in a skillet before adding them to the slow cooker.
  • This dish is excellent for Date Night Slow Cooker Recipes because it looks and tastes gourmet with minimal effort.
  • To make this a Crockpot Marry Me Chicken Pasta, simply toss cooked pasta directly into the thickened sauce with the shredded chicken.
