This recipe makes an incredibly easy and flavorful pot roast with minimal ingredients. It is a ‘dump and go’ recipe that uses a chuck roast, ranch dressing mix, au jus gravy mix, butter, and pepperoncini peppers. The goal is a tender, savory, and crowd-pleasing meal with very little effort.

Ingredients

  • 3-4 lb chuck roast
  • 1 packet (1 oz) ranch dressing mix
  • 1 packet (1 oz) au jus gravy mix
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup sliced pepperoncini peppers (or whole)

Instructions

  1. Place the chuck roast in the slow cooker.
  2. Sprinkle the ranch dressing mix and au jus gravy mix over the roast.
  3. Top with the butter and pepperoncini peppers.
  4. Cover and cook on low for 8 hours or on high for 4-5 hours, until the roast is tender and easily shredded.
  5. Shred the roast with two forks and serve with the pan juices.

Notes

  • Serve over mashed potatoes, egg noodles, or rice.
  • The leftovers are great for sandwiches or sliders.
