Ingredients

Scale
  • 3-4 pound chuck roast
  • 1 packet (1 ounce) ranch dressing mix
  • 1 packet (1 ounce) au jus gravy mix
  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup pepperoncini peppers, sliced, plus 1/4 cup of the brine

Instructions

  1. Place the chuck roast in the slow cooker.
  2. Sprinkle the ranch dressing mix and au jus gravy mix over the roast.
  3. Place the butter on top of the roast.
  4. Add the sliced pepperoncini peppers and the pepperoncini brine to the slow cooker.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the roast is fork-tender.
  6. Shred the pot roast in the slow cooker juices before serving.

Notes

  • Serve the Mississippi Pot Roast on its own, with mashed potatoes, or on slider buns.
  • The pepperoncini peppers add a subtle tang and do not make the dish spicy.
  • This recipe is incredibly forgiving and easy to adjust to your taste.
